If everybody would look after kids not to play games like hitman they wouldn't even have the chance to look forward to such a movie. Hitman was, is, and will always be a game for adults only, so why do those movie producers take the fun from the adults which are allowed to see the movie, just because to give the fun to kids which want to legally see some violence? They feel this is the way to go if they want to make as much money as Spider-Man 3 or Pirates. Another reason this is done they feel people that saw it will buy the unrated when it comes out on DVD too since they'll see more badass footage.
