People who own both systems will buy the 360 version for the bonus, thus skewing the data in favor of the 360, and potential customers on the PS3 will at best grow irritated with the development company. I imagine that this kind of offensive snub is not easily forgotten by its potential customer base. So how is this wise? They may encourage a few more 360 owners to buy the game, but the long term effects may do more damage than the few extra initial sales can make up for.
